Gnocchi

Gnocchi have been part of the Italian tradition since Roman times. When potatoes had not been imported to Europe yet, they were mainly made with flour, semolina or a wide variety of other ingredients which still survive in local traditions.

Gnocchi are now commonly made with potatoes. The variety in their preparation though is still found in the multitude of recipes Italians use to cook them. Try them with a four-cheese sauce, an arugula sauce, “alla sorrentina” (i.e. with tomato sauce and fresh mozzarella) or with a lobster and mascarpone sauce. Have your gnocchi the way Italians make them!
